Yaki Kansho (Baked Sweet Potato)

Did you know that sweet potatoes are a kind of super food? Rich in vitamin A, vitamin C, manganese, copper, pantothenic acid and vitamin B6, they are also a good source of potassium, dietary fiber, niacin, vitamin B1, vitamin B2 and phosphorus. Miyazaki is a prefecture in Kyushu and Kyushu in general is famous for its sweet potato produce. This recipe uses the sweet potato from Miyazaki.

Ingredients

-Kansho (Sweet Potato) 250g

-Water 1/3 Tea Spoon*

-Honey 3 Table Spoon*

-Avocado Oil 3 table spoon*

-Soy sauce ½ Table spoon*

-Vinegar 1/3 tea spoon

-Black Sesame a pinch*

*All seasoning must be mixed well together.

 

Step 1: Slice the Kansho into 1 cm and leave it in a bowl water for a while.

Step 2: Mix all seasoning together except vinegar and sesame.

Step 3: Heat the frying pan and add mixed seasoning and kansho. Then add vinegar and fry the Kansho evenly until well cooked with low heat. Continue to fry it until it becomes sticky.

Step 4: Garnish with black sesame.
